You know that the production of specialty coffee makes up less than 5% of the total production of coffee in the world, as well as how it is grown, how it is harvested, processed, roasted and how it reaches you.

The beginning of Dabov Specialty Coffee
14 years ago, we created Dabov Specialty Coffee with one main goal – to open the door to the world of specialty coffee on the Bulgarian market and leave our contribution to the development of coffee culture. Over time, in addition to specialty coffee, we began to offer some of the highest quality premium teas and chocolates on the market, with the idea that everyone would have the opportunity to enjoy their favorite hot drink. Since then, we have not only uncompromisingly improved the quality of our products, but also the personal care for each and every customer, because everyone who shares our passion for coffee is part of our big family.
We often like to say that DABOV Specialty Coffee is not a product, but a project – it starts on the farm and ends in the cup, and we are the intermediary responsible to both the farmer and the customer.

In the far west of Ethiopia, just kilometers from the border with South Sudan, lie the dense, wild-growing jungles of the Bench Maji Zone. It is a place of stunning natural beauty, where one can see the expanse of ancient, overgrown forest from above. This breathtaking landscape is home to the Gesha Village Coffee Estate, a 471-hectare coffee farm that has been built from scratch over the past six years. It is the work of two exceptional farmers who produce coffees as inspiring as their surroundings.
A shared passion for coffee works wonders
Rachel Samuel was born in Ethiopia and rediscovered the beauty of her homeland when she returned there in 2007 to film a documentary about the amazing Ethiopian coffee. During this process, her passion for her homeland and her compatriots awakened, and the coffee industry became her personal mission. The coffee path quickly led her to Willem Booth, a San Francisco Bay Area coffee educator known for his passion for the Geisha variety. He taught her the basics of growing and evaluating coffee with a focus on quality.
She soon returned with her husband Alan to Ethiopia to find suitable land to start their Geisha coffee growing enterprise. For months, they were searching for the perfect location – one with high altitude, sufficient rainfall, moderate climate and other important natural factors needed to produce excellent quality coffee. They found it at Bench Maji. The virgin landscape gave them the unique opportunity to build the coffee farm of their dreams from scratch and also something very special: proximity to the Gori Gesha Forest – the birthplace of the Geisha variety.
They quickly got to work collecting a selection of wild Geisha plant seeds from the Gori Gesha Forest. Once they had this valuable material, they spent month after month tirelessly turning the land into a working coffee farm capable of producing some of the best Geisha coffee in the world. In the past, Western Ethiopia was largely cut off from the global specialty coffee market, but now world-class Geisha coffee is available just a stone’s throw from where it originated.
How is coffee grown in Gesha Village?
Rachel Samuel, her husband Adam Overton and Willem Booth divided the land into eight sub-farms – blocks where they can track the production of their three varieties – Geisha 1931, Gori Geisha and Illubabor Forest – and experiment with different processing and fermentation approaches. The cherries picked from each block are marked to indicate their origin and, through a system they have developed, trace their entire journey from the mill to export. At Gesha Village Coffee Estate, several processing methods are used to bring out the optimal flavor of their cherries, namely natural (dry), wet and honey.

On September 22nd, our showroom in Varna opened its doors at 21 Ivan Vazov Street.
The official opening will take place on 25 and 26 September – during these two days we will treat you with a cup of tea or a unique espresso prepared by our coffee hunter and inspiration – Jordan Dabov.
The story, however, turned out to be even more interesting, because exactly 101 years ago on September 22nd the great Bulgarian classicist and patriarch of Bulgarian literature – Ivan Vazov died. On the same day, 101 years later, on the street bearing his name – Ivan Vazov 21 in Varna we opened our doors to welcome you.
This time we are inviting you not only for coffee, but for a cup of tea, and that’s on purpose. Because few people know that every afternoon Ivan Vazov liked to drink a cup of tea made in a samovar. Whether this quiet moment brought him inspiration or he used it to relax from a long creative day will always remain a mystery. But we want to honor the great Bulgarian author and, inspired by his afternoon ritual, prepare for you an irresistible tea experience.

Over the years, Varna has always been one of our favorite cities where we have concentrated our efforts. Many of Varna’s residents know us from the annual “Food and Wine” exhibitions we used to participate in.

Like everything else in our household or workplace, coffee machines need good maintenance.
As people who appreciate the unique taste of coffee, we know that to enjoy a perfect cup every day, we need to take good care of the cleanliness of the coffee machine. Whether you have a semi-automatic commercial espresso machine in your coffee shop or a capsule coffee machine at home, we’ll give you a few tips on how you can find out what kind of cleaning your irreplaceable helper in making delicious coffee needs.
Let’s take a look at some of the coffee machines, their components, and how to clean them. It’s easiest to look at the individual components your coffee machine has and clean them accordingly.
If your machine uses capsule coffee:
Let’s start with the capsule coffee machines. If your machine uses capsule coffee, you’ll need to clean the brew chamber, spout, and washer of the machine. This can be done using a cleaning capsule. Using a cleaning capsule is simple, easy and quick but extremely effective. For the maintenance of our capsule coffee machines, we at Dabov Specialty Coffee trust Cleaner Caps, which are specifically designed to degrease and purify the brewing container of a coffee machine. They are ideal for cleaning Nespresso® coffee machines.
If your machine has a frother or other additional dairy equipment:
The milk processing components of coffee machines need a milk fat cleaner as well as descaling of the automatic frothers to prevent and remove milk build-up and clogging of the unit. If not taken care of, these blockages can lead to machine failure. Not to mention that this is a place where bacteria grows very quickly. We recommend MFC Green – an acidic, organic milk frother cleaner that does an excellent job of cleaning milk contaminants without leaving harmful residue or causing corrosion in the coffee machine.
And for those who want to take care of their coffee machine that they use at high speed, we recommend MFC Blue – high performance alkaline milk steamer cleaner. The cleaner is designed for machines used at high frequency.
If your machine has group head(s) (manual and semi-automatic commercial espresso machines):
Espresso machines and their group heads need a concentrated cleaning powder to effectively remove old, unwanted coffee oils, odors and tannins from the head, channels and valves. The powder can be used for routine cleaning of the group head, as well as for cleaning filters, trays and other ancillary equipment. We recommend the EVO powder, which removes oils, sediment and coffee stains, improving the taste and aroma of the espresso. The ingredients are rapidly biodegradable and odorless. It contains no GMOs and is phosphate and chlorine free. The formula is non-corrosive and protects the machine. A measuring scoop is included in the 1 kg boxes.
So that the coffee machine always shines:
Just as the internal components of your coffee machine need special maintenance products, it is advisable to freshen up the exterior with gentle sprays, not only to keep it clean at all times but also to keep it looking shiny for longer. We use Spray and Wipe Green, which is specially formulated for cleaning the exterior surfaces of coffee machines, countertops, tables and all washable hard surfaces. Safe for all parts of the machine as the ingredients and formulas of the product are NSF certified. Leaves no harmful residue and doesn’t cause corrosion.

Many people think that coffee is just a way to get energized, and it’s no coincidence that they call it “fuel for the body”, but we believe that at its core it’s a really complex and interesting drink to experiment with. So many wonderful and distinctive flavors!
The interesting thing about filter coffee is that the quality can range from bland and stale, to award winning, rich in flavor and with perfect texture. It all depends on the brewing technique, the right appliances and the coffee beans.
Preparing filter coffee consists of a few simple steps (pouring hot water over the coffee, through a filter, into a pot). There is also the widely known drip coffee, which usually involves an electric machine with a timer that automatically starts the coffee brewing and keeps the pot warm on a hot plate so that people can come back for more hot coffee during the day. Such is most likely to be found in airplanes, hotels and other public places.
Today, however, we’re going to focus on the “pour-over” method, which is a manual way of making filter coffee. It allows much better control over the amount of coffee and the overall result. We will also introduce you to three different devices that we prefer to use for filter coffee: the Chemex, the Hario and the Asobu. With each appliance, the preparation technique is very similar, but the taste is absolutely individual.
What is Chemex?
The Chemex is a wonderful glass flask for pouring coffee, invented in the 1940s by Peter Schlumbom, an enterprising chemist in the USA.
It is recognisable by its wooden neck collar with hanging leather tie. It’s a beautiful piece on display at the Museum of Modern Art in New York, and was nominated by the New York Times as one of the hundred greatest inventions of the twentieth century.
The Chemex filters are also the work of Dr. Schlumbom, a special thick filter paper that prevents oils from the sediment from passing into the pitcher and encourages the “blooming” – more on that in a moment.

What is Hario V60?
This little beauty is a simple device that can filter coffee directly into a ready-to-drink cup, rather than a pot (although variations are available if you’re brewing for two). It’s great for experimenting with coffee making as it allows different flavors to be revealed, depending on the method being used.
The V60 was invented by the distinguished Japanese manufacturer Hario, who originally produced glassware for scientific laboratories.
Plastic, ceramic and metal varieties are available with special protrusions in the funnel that allow air to pass through for smoother extraction.

What is Asobu?
The advantage of the Asobu device is that with it, there is no need for a paper filter to make the coffee. The sleek glass dripper with stainless steel mesh filter brews clean and refreshing coffee, and the vacuum insulated coffee brewer keeps coffee hot for up to 8 hours. Portable, the steel coffee brewer includes a lid to easily enjoy coffee on the go. The Asobu Pour Over Coffee Maker makes the perfect cup of coffee over and over again.

Now, let’s move on to the brewing steps:
STEP 1 – FOLDING AND PRE-WETTING THE PAPER FILTER
Fold the paper filter into the shape of a cone and insert it into the neck of your appliance. Moistening the filter ensures that it will stay in place as it was originally placed, and removes the taste of paper. Remember to discard the water after rinsing!
STEP 2 – CHOOSE YOUR COFFEE
The origin and blend are, of course, your choice. In terms of grind – filter coffee works best with a medium grind, although for Asobu or Hario we recommend grinding a little finer than for Chemex.
Measure 65 grams of coffee for every liter of water. Using this formula, if you use only 250 ml of water, you need 16 g of coffee. Freshly ground coffee is always best, so if possible, grind it just before brewing. Add the coffee to the filter that is already fitted, making sure it is evenly distributed. If desired, you can make a small indentation in the middle to help moisten the coffee.
STEP 3 – HEAT THE WATER
The best option is to use filtered water to prevent minerals from contaminating the flavor, but if you have the option to use tap water only, that’s not a problem either. To be precise, aim for 90-95°C or a kettle that has been left to boil and then cooled for 20-30 seconds. Don’t pour boiling water over the coffee to avoid burning it.
STEP 4 – POUR SOME MORE
Initially, pour in some water, wetting the entire coffee grounds, and leave for 30 seconds in pre-infusion (blooming = the part of the filter coffee brewing process where the coffee gasses are released when the water meets the freshly ground coffee), then you can continue, pouring continuously in small circles around the chute, keeping the water level steady. Bring in as much water as possible – this means a higher brewing temperature and a much more intense flavor extraction. Stir a little to make sure the coffee hasn’t stayed dry.
STEP 5 – REMOVE THE FILTER AND COFFEE BREWER AND POUR INTO YOUR CUP
Once the cup or pot is almost full, you’re done. It’s that easy!

With summer in full swing, we’re all already dreaming of a relaxing day at the beach, listening to the sound of the waves crashing on the sand with a refreshing drink in our hand. Unfortunately, we can’t physically take you to the beach, but we can bring this wonderful summer experience to you, because we offer one of its key elements – a cold, refreshing and delicious Cold Brew.
Since very recently, Dabov Specialty Coffee has been an exclusive partner of Hard Tank – a professional Cold Brew system. The Polish brand for Cold Brew equipment has recently launched the HardTank Dispenser – a countertop tap system that can flow either cold brew coffee or cold brew tea, and also nitro cold brew.
A few weeks ago, the new dispensing system won the SCA Award for Best New Product at the World of Coffee 2022 event in Milan, Italy. The invention serves as a container, cooler and dispenser that draws ready-to-drink coffee from the brewing machine through sealed tubes without oxidation.

About the drink
Cold brew is a beverage made by steeping coffee in cold water. The low temperature of the water affects the taste of the coffee drink. It is refreshing, invigorating and lower in bitterness and also contains many more antioxidants than hot beverages.
Nitro Cold Brew is the way Cold Brew is served. The drink is saturated with nitrogen gas and served from a special tap that generates a ‘cascade effect’ often used by the legendary Guinness beer. Nitro cold brew is incredibly creamy, with a velvety feel on the palate while being quite refreshing.
For the preparation
Brewing a Cold Brew the traditional way is slow and laborious. Furthermore, the shelf life and quality of the drink are reduced because of the production method.
A few of the negatives of making cold brew by hand are the slow production (16-24 hours), the difficult and expensive filtration system (disposable paper filters) and the fact that oxidation during production has a negative impact on the overall quality.
On the other hand, HardTank’s dosing system guarantees 18 liters of cold beverage in just 60 minutes and up to 250 liters of cold brew per day. The system is fully automated, without the use of disposable paper and filters. The extraction is by pressure, which guarantees the purity of the beverage afterwards, i.e. the absence of microorganisms that occur naturally in foods. Since the time of our grandparents we have heard about our Bulgarian rose oil – about the jam that is made from it, about the cosmetics we see in luxury shops and so much more. The famous Kazanlak rose is the offspring of the Damascena rose, one of the four species of oil-bearing roses grown around the world.
The presence of rose oil and its biochemical composition is the reason for the beneficial effects of the rose. So it is actually only the oil-bearing rose, and not roses in general, that provide all the health benefits you will learn about below.
General benefits of rose
Rose is often used as a treatment for stress, anxiety and depression in phytotherapy and aromatherapy. Rose oil’s ability to aid in cell regeneration is a key component of many pharmacological and nutritional supplements.
However, have you ever tried rose petal tea?
The levels of vitamin C in rose petals are extremely high. One cup of rose petal tea is said to contain the same amount of vitamin C as 60 oranges. Even if it’s not quite that much, it’s undeniable that the rose has strong antioxidant effects.
Likewise, our skin needs a similar level of support. We can consider rose tea a natural beauty product – apart from its vitamin C content, rose functions as a stimulator for the natural creation of collagen, which slows down the aging process.
Rose also has many health benefits for our body. Rose tea increases the production of bile juice, which helps to break down lipids. In addition, it is believed to have probiotic properties and nourishes beneficial gut bacteria.
Rose tea provides a calming and relaxing effect, like most herbal teas. It can be used as a component of general therapy for those experiencing increased stress, anxiety and depression. It can also be used as an enjoyable way to relax, unwind and improve sleep for those experiencing the typical negative effects of everyday stress.
According to a 2015 study, the Damascena rose contains anti-inflammatory and anti-arthritic effects. The study, which used liquid rose extract, also supports the anti-inflammatory properties of rose water, which have been used in folk medicine for generations.
How to make delicious and beneficial rose tea?
Warm water to 100C. Pour 1 tsp or 3-5 buds with 250 ml of hot water, cover and brew for 5-6 minutes. Strain the finished tea and add a little honey if desired.
Othaya Farmers Cooperative Association – Producer of the finest Kenyan coffee
The Othaya Farmers Association is located about 150 km north of the Kenyan capital Nairobi, in the town of Othaya, Nyeri County. It lies between the heights of Mount Kenya and the Aberdare mountain range, at an altitude of 1828 meters. Othaya Farmers Co-operative Society Limited is one of the largest all-farm certified coffee marketing farms in Kenya. They are producers of world renowned Kenyan Arabica, distinguished by its exceptionally high quality.
The Society was incorporated in 1956 as a coffee marketing society with an initial membership of 250 farmers. It currently has 19 factories with a total membership of 15 000 smallholder farmers. The Othaya Farmers Cooperative Association has coffee nurseries, 19 coffee factories/wet mills and warehouses at each of the wet mills to provide agricultural inputs. The society also has a dry mill that services the 19 coffee factories through funding from the sale of members’ shares.
Othaya Farmers Cooperative Association is a producer of the highest quality Kenyan coffees. Our coffee farmer, Jordan Dabov, had the pleasure of visiting the farms and mills that are part of the association and selecting for you as many as 5 new specialty coffees from Kenya that impress with their flavor and aroma.
Where do the new Kenyan coffee masterpieces come from?
The Kamoini factory
Kenya Kamoini coffee is sourced from family farms located on the southeastern slopes of the Aberdare mountain range in Nyeri County, Kenya. Farmers deliver the harvested cherries to the Kamoini factory (wet mill) for processing. Cooperative members typically grow about 250 coffee trees on half-acre plots, also planted with bananas, grevilleas and macadamia.
This coffee is one of Jordan Dabov’s favorites, and chose it for its balanced fruity-chocolate flavor. “Kenya Kamoini coffee will enchant you with its intense flavor and delicate notes of wild strawberries, blackberries and raspberries wrapped in smooth milk chocolate,” says Jordan Dаbov about the coffee.

The Mahiga Factory
Mount Kenya, located in the central province of Kenya, is the second highest peak on the African continent and is an impressive natural landmark. Nyeri is one of the most famous counties in the central part of the country, next to Mount Kenya. The Mahiga factory is located in this area and has 400 members who actively harvest the crop and deliver it to the processing center. The area is characterized by red volcanic soils, rich in phosphorus and well drained, which are ideal for growing the characteristic Kenyan coffee.
In this coffee you will taste the sweetness of honey, enriched with the freshness of red apple and finished with the mild sugary taste of toffee. “An exceptional coffee” – in the words of our coffee farmer Jordan Dabov.
The Gatugi Factory
Gatugi is a coffee factory that includes a huge amount of wet mills, 18 in total, dating back to the late 1950s. The Gatugi factory is located at just under 1900 meters above sea level, just along the Ichamama River, which is fed by the Karima Forest above it. The small plots of land on which the farmers cultivate help to carefully grade the cherries, which is perhaps the most critical variable in ensuring the quality of the coffee.
Specialty Coffee Kenya Gatugi is the perfect combination of flavor notes of green apple, white grape and cane sugar. “Sweet and fresh, as all coffee should be in your daily routine,” says Jordan Dabov and recommends it as a daily cup of coffee.
The Gatuyaini Factory
The coffee at the Gatuyaini factory in Kenya’s Nyeri district is grown in red volcanic soils at high altitudes. Under these growing conditions, the coffee beans develop slowly, becoming very full-bodied and rich in aroma with a classic Kenyan flavor profile – bright and complex aromas. Coffee from the Nyeri region is known as the ‘heart of Black Gold coffee’.
And as for the coffee they produce – Jordan Dabov says this coffee has captivated him with its balance of chocolate and fruit – sweet and fresh.

Githiru Farmers Cooperative Society – limited resources but perfect quality
One of the flavors of Dabov Specialty Coffee’s 2022 selection, Kenya Githiru Coffee is produced by the Githiru Farmers Cooperative Society.
The Githiru Farmers Cooperative Society only has one factory, but that doesn’t mean that the coffee produced by them is inferior to its competitors. The farmers grow their coffee at altitudes ranging from 1350 to 1900 meters. There are almost 900 members in Githiru and most of them grow a mixture of SL-28 and SL-34 varieties and small amounts of Ruiru and Batian. Like many Kenyan lots from the mountainous southern slopes of Mount Kenya, Githiru Kenya Coffee is grown in fertile volcanic soil rich in natural phosphorus, resulting in high quality and yield.

Kenya is renowned for its coffee growing traditions, which today, enriched with technological innovations, give the green bean a unique quality. The country’s natural features are also the basis for its unique flavours and qualities. The abundance of water in the central regions allows the factories to wash and soak their coffee entirely with fresh, cold, river water. Established sorting by grade or bean size is a long-standing tradition that makes the roasting process easier.

Costa Rican coffee – tradition and heritage
The story of this coffee began 40 years ago when Ivan’s father started his career as a farmer. From a young age, his work was always related to coffee crops – either picking coffee or helping his parents in the daily activities associated with production.
In 2014, the farm La Esmeralda, which is part of the larger farm Agua y Manto (9th place in 2020 COE), was purchased with great effort by the whole family. In the beginning, the priority was to produce avocados and other fruits from the region. Learning more and more about the specifics of farming, the family began to discover the potential of this land and its great qualities.
Тhe challenges of growing coffee
Since they already had some knowledge regarding coffee, the Ureña family decided to start with a small level. The first question and challenge they faced was deciding which variety to plant so that it would adapt best to the high altitude of the farm. In the end, they settled on several different coffee varieties and planted a few of each, deciding after two years and based on the results to keep Geisha, SL28 and Costa Rica 95.
“Growing coffee at this altitude is a great challenge that proves the patience and perseverance of the farmers. We have spared no effort during these 5 years to try to produce one of the best coffees in the world.”
The next big challenge they faced was processing the coffee. Although Ivan’s father had some experience, the whole family had to learn this new activity. Therefore, they started visiting other experienced micro-mills in the region to get tips and learn about the different processes.
The biggest reward – winning Cup of Excellence
All these challenges motivate the members of the Ureña family to continue their dedicated work and acquire new and crucial knowledge about coffee cultivation. The results are not delayed – in 2021, they achieve victory in the most prestigious specialty coffee competition – the Cup of Excellence – winning first place or their coffee is named the most delicious coffee of the year produced in Costa Rica. The funds from the sale of the Cup of Excellence auction are reinvested in the farm, which aims to achieve sustainable development over time and produce even better coffees. Thanks to this success, they have the opportunity to build a new greenhouse in which to try out new production processes. Ivan believes that innovation in coffee production will repay them in the future in a fitting way.
