Have you already tasted our Peru – Bio Swiss Water Decaf?
A few years ago, when we were looking for the best decaffeinated coffee, we chose Swiss Water® Process for several reasons.
We share their philosophy that coffee fans have the right to freely choose their decaf coffee, having sufficiently transparent and detailed information about the way that it was produced. If it comes from a farm that adopted sustainability and with preserved, excellent taste, unspoiled from treatment with chemical solvents, we bet on it.
We have already talked about the four main ways to extract caffeine from coffee in the coffee industry. Now, let us focus on the one we chose!
Let’s talk about Swiss Water® Process
As we have already pointed this out in our article, Swiss Water® Process uses water and the naturally occurring soluble solids from green coffee to gently remove caffeine while preserving the origin flavors and characteristics of the coffee. The process occurs without the use of any chemical solvents and their residue.
Specialty coffee fans around the world know Swiss Water® Process. According to StudyLogic research from 2017 in the USA, 84% of local consumers consider purchasing a decaf if they know it is Swiss Water®.
The Swiss Water Decaffeinated Coffee Company has a deep and diverse experience in producing decaf coffees. Since its foundation in the 1930s, numerous roasters, baristas, Q Graders, educators, traders, scientists, and engineers have been providing many layers of coffee knowledge.
In Swiss Water®, they consider each coffee’s origin as well as physical attributes such as moisture, density, and water activity, and adapt their process for each new batch. They use their own production data along with research performed at independent laboratories to continually improve their process from start to finish.
The result is a process that leaves coffee tasting as delicious as it did before Swiss Water® got their hands on it.
What are the Swiss Water® process advantages?
The Swiss Water® process maintains the quality, taste, and characteristics inherent to the green coffee. Technicians make pre- and post-process comparisons for every decaf batch. This way they ensure great flavor and a high level of consistency between regular and decaf.
We enjoy superior cup quality thanks to temperature control and optimization of other critical factors. And the end result is coffee that is 99.9% caffeine-free. In addition, stable water activity yields longer unroasted shelf life. This is a plus for us as roasters and for you, as specialty coffee lovers.
Swiss Water® Process was conceived as an alternative to chemical decaffeination and maintains that promise today. That is why it meets the specialty coffee lovers demand for purity of ingredients and transparency in processing.
As a sustainability and environmentally friendly roastery, we are extremely happy that we share the same goal with The Swiss Water Decaffeinated Coffee Company. The Swiss Water® Process maintains certifications – Organic, Fairtrade, Rainforest Alliance, UTZ, 4C, Kosher, and Halal. More than 40% of their decaf offerings have at least one certification.
85% of water usage during the decaf process is returned to its source as clean, community supply water. The remaining 15% goes for coffee hydration.
The best decaf coffee – 100% chemical-free
The Swiss Water Decaffeinated Coffee Company is the only one among coffee decaffeination companies exclusively focuses on a chemical-free method. Most decaf coffee passes thorugh a process with the use of chemical solvents.
These processes impart chemical residues that can alter the taste of the coffee. Our body ultimately consumes them, even if we speak only of small amounts. Swiss Water believes that we all should have a choice that is entirely free of added chemical residuals. Moreover, it shold be one which results in an amazing cup of decaf. We will agree on the fact that taking control of our caffeine or chemical intake should never be a compromise in taste-or values.
Swiss Water® Process decaffeinated coffee is the chemical-free choice for coffee lovers.
What exactly happens during the Swiss Water® process?
The Swiss Water® Process begins by infusing high-quality green coffee beans in pure clean water. This way, the technicians create the so-called “Green Coffee Extract,” or GCE. This step occurs only once. The good news is that one can use the original beans then as compost.
The GCE then runs through carbon filtration, which traps only the caffeine molecules in the carbon’s pores.
Next the GCE, now decaffeinated, is circulated over each batch of green coffee beans. The caffeine, not the flavor components, naturally flows out of the beans, through simple diffusion.
Because the GCE is already saturated with all of the soluble solids that give coffees their unique flavors and characteristics, any possible flavor changes that might occur are held to an absolute minimum.
This is why the Swiss Water® Process maintains coffee flavor and complexity so accurately. And it does so without adding foreign “process” flavors or chemical residuals to the coffee like most other processes do.
Swiss Water’s technicians use constant data feedback on process performance to optimize each step and the overall outcome. They monitor the water temperature, the caffeine levels, the GCE levels and adjust anything that needs adjustment.
Now you know all the facts behind Swiss Water® Process. So why don’t you have a cup of the best decaf coffee, Peru – Bio Swiss Water Decaf!?
